Our Peka Pasta Rings copycat recipe is inspired by the delicious dish served on the kid's (ahem, youngling's) menu at Docking Bay 7 Food and Cargo in Disney World's Galaxy's Edge. This is pasta served with a plant-based marinara sauce made with Impossible Burger.
We loved this dish so much, we came home from vacation eager to add a version of it into our dinner rotation. But, alas, we could not find Impossible Burger in our local grocery stores. We tried Beyond Meat, but we found the smell and taste off-putting.
We'd all but sworn off making a version of Peka Pasta Rings back home when-- alas!-- Impossible Burger finally popped up at our local, Midwest grocery store. This stuff is a dream to cook up, and the taste is as good as we remember it at Galaxy's Edge.
Don't be scared to try this plant-based meat (!) as it doesn't sacrifice flavor for nutrition (it's comparable in calories and saturated fat to ground beef). The main draw is that it's vegan!
The only thing missing? Batuu's unique pasta shape. Despite its name, the pasta used here is Ditalini. (Don't buy pasta rings, they're too tiny!) Though not prevalent in grocery stores near us, we could easily order a couple of boxes of Ditalini through Amazon.
If you're looking for a Batuu inspired beverage to go with this Peka Pasta Rings recipe, we recommend a copycat Moof Juice, Takodana Quencher or Surly Sarlacc. The meal will have you feeling ready for ride on the Millennium Falcon. Enjoy!
Ingredients
- 2 tablespoons olive oil
- 12 ounces Impossible Burger (ground, plantless burger). Use Impossible Burger. Do not use Beyond Meat!
- 1/4 cup white onion, chopped
- 1 teaspoon fresh garlic, minced
- 14.5 ounce can crushed, fire roasted tomatoes. We used organic, Muir Glen brand.
- 1/4 cup vegetable broth
- 2 tablespoons tomato paste. We used Cento brand, double-concentrated tomato paste.
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried basil
- 1/2 teaspoon sugar
- 1/2 to 1 cup reserved pasta water
- Salt, to taste
- Ditalini pasta. We used Barilla pasta found on Amazon (affiliate link).
Instructions
- In a medium-sized saucepan, heat the oil on medium heat. Add the Impossible Burger and cook, breaking up the "meat" into pieces, until no longer pink.
- Add the garlic and onion to the Impossible Burger and cook, stirring frequently, for 3 minutes.
- Add the remaining ingredients except for the reserved pasta water and salt. Stir well. Reduce the heat to medium-low and simmer (gently bubbling) for about 20 to 25 minutes, stirring occassionally.
- While the sauce is simmering, make your Ditalini pasta according to package directions. When the pasta is cooked to desired doneness, reserve 1 cup of pasta water before straining the pasta.
- Add 1/2 cup to 1 cup of the reserved pasta water to the sauce and stir. Season, to taste, with salt. Serve the sauce over Ditalini pasta and enjoy!
