The holidays just got a whole lot brighter thanks to this Disney inspired Moku Niu copycat recipe! We were thrilled to see this alcoholic drink pop up for the holidays at Disney Polynesian Village Resort's Barefoot Pool Bar. Consisting of rum, cream of coconut, pineapple juice and blue curaçao, this drink is a welcome respite from chocolate and peppermint overload.
This is a creamy, coconut-y, tropical drink. If you're a fan of Piña Coladas and Blue Glowtinis, give this Disney Moku Niu copycat recipe a try. In the midst of winter, its tropical flavors transported us to warm, sunny days at Disney's Polynesian Village Resort.
While we think the Moku Niu is plenty dazzling on its own, Disney adds two, optional accessories that double as souvenirs. First, the drink can be served in a monkey-shaped coconut! We tried our best to locate one but no such luck. The same goes for the the gorgeous, bright red, Mickey shaped glow cube. If you can't get to Disney, your best bet for locating these accessories is eBay.
Since the Moku Niu is around for the holidays, the glow cube is meant to resemble a Christmas ornament. When it's added to this drink, we love the red and greenish-blue color combination. So much so, that we had to jury-rig a Mickey shaped "ornament" by using 3 cherries and a couple toothpicks. Sure, our ornament doesn't light up, but it's tasty!

Ingredients
- 3 ounces cream of coconut
- 2 ounces pineapple juice
- 1.5 ounces white rum (Sammy's Beach Bar rum)
- 1/2 ounce blue curaçao (Bols Blue Curaçao)
- Optional Mickey shaped cherries:
- 3 cherries (optional)
- 2 toothpicks
Instructions
- Fill a 16 ounce cup with ice.
- In a separate glass or shaker, combine the cream of coconut, pineapple juice, rum and blue curaçao.
- Serve on ice. Garnish with Mickey shaped cherries (optional).
