This Pistachio Crusted Salmon recipe is inspired by one of our favorite Disney World restaurants: Animal Kingdom Lodge's Boma- Flavors of Africa! Even with the abundance of out-of-this-world food at Boma's dinner buffet, we never pass up the Nut Crusted Salmon.
Our recipe is a quicker, cheaper spin on Boma's original recipe. Don't get us wrong: Boma's recipe, which requires 4 different types of nuts and toasted seasonings, is amazing. But, our simpler version makes for a very easy, weeknight meal that we don't have to reserve for special occasions.
That said, this recipe feels special! The flavors bring us right back to Animal Kingdom Lodge. Even the look of the spices remind us of the warm, earthy colors of Animal Kingdom Lodge's lobby. Who knew spices could be so beautiful?
This recipe is also very versatile, so don't shy away from it if you see something you don't like. If you don't want the sugar, omit it. You can cut out the cayenne completely or double it for a good amount of heat. And, if you watch the ingredients you use like we did, this makes a very satisfying gluten free and dairy free meal!
Pistachio Crusted Salmon Recipe Inspired By Boma
Yield: 1 Pound Salmon
Ingredients
- 1/3 cup pistachios, shelled
- 1/2 teaspoon ground, yellow curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cayenne
- 1 teaspoon granulated sugar
- Cooking spray
- 1 pound salmon, raw
- 2 tablespoons olive oil
Instructions
1. Preheat the oven to 350 degrees.
2. Make the pistachio and spice blend: Add the pistachios, curry powder, cumin, coriander, cayenne and sugar to a small food processor such as this (paid link). Blend until the pistachios are chopped. If you don't have a small food processor, chop the pistachios with a knife, then stir pistachios with the seasonings to combine.
3. Spray a glass baking dish with cooking spray.
4. Add the salmon to the baking dish and coat the top of the salmon with olive oil.
5. Next, coat the top of the salmon generously with the pistachio and spice blend. See photo below.
6. Bake, uncovered, until the salmon is done. Cooking times vary depending on how thick your salmon is and your desired doneness, but this generally takes 20 to 30 minutes. Enjoy!
