The brioche ice cream sandwich, or Croque Glace, is a favorite treat of ours in Disney's Epcot's France Pavilion. Although, we have to admit that when we first heard of it, we weren't certain we would like it. Ice cream on a hamburger bun?
Yes, Disney's Croque Glace is exactly that: your choice of ice cream in a brioche bun, with chocolate or raspberry sauce, warmed and sealed. Not one to shy away from new and adventurous treats, we tried a bioche ice cream sandwich at L'Artisan de Glaces. Good news: is was délicieux! Somehow, the warm, buttery brioche complements the sweet and cold ice cream nicely.
How is a croque glace warmed and sealed?
Disney uses commercial gelato panini presses, like this Waring brand. When done correctly, the perimeter of the brioche bun presses tightly so that the ice cream cannot run out. But, we weren't about to spend nearly $500 to make one at home! So we decided to see if our trusty mini Mickey waffle maker would do the trick. Just our luck, it warmed and sealed the sandwich beautifully. But this version might be even better than France's version because it presses a perfect Mickey face into the brioche bun!
