We love Disney Polynesian Resort nachos. Even if you aren’t staying at the Poly, it’s worth going out of your way for a visit to Capt. Cook’s quick service restaurant. There’s just something about the vibrant colors, lively music, and aloha spirit that will totally relax you after a lively morning at Magic Kingdom.
It’s hard to beat some of the options here. The Thai Coconut Meatballs and the nachos-- specifically the Pulled Pork Nachos-- are both packed with flavor and super satisfying.
We decided to diznify dinner by making a version of these nachos in our own kitchen and were blown away at how amazing they tasted and how easy it was to prep. This is a fun, 15-minute meal!
Disney Polynesian Resort Nachos Copycat Recipe
Yield: 4 servings
Ingredients
- 9 oz. kettle-style original flavor potato chips
- 3.5 oz. wonton strips
- 15 oz. white queso dip
- 16 oz. pulled pork in BBQ sauce (fully cooked)
- 1 cup tomatoes, chopped
- 1 cup pineapple, chopped
- 1/4 cup red onion, chopped
- Spicy mayo*
Instructions
1. Heat up the white queso dip and the pulled pork as directed on the package.
2. Your nachos are ready for assembly! Make a layer of kettle chips and wonton strips and then spoon some of the ooey gooey cheese dip over the top. To finish, add a layer of savory BBQ pulled pork, then the chopped tomato, pineapple and onion.
If you’d like to add some heat to your sweet, drizzle with spicy mayo.* We’ve never tried the spicy version of the nachos at Capt. Cook’s but, at home, the sriracha mayo paired well to balance out the sweetness of the BBQ sauce.
We really enjoyed these tasty nachos! They are so easy to make, we are adding it to our weekly menu. This also pairs well with a Kona Brewing Co. Longboard Island Lager. Cheers and mahalo for visiting!

I found that if you mix mayo with spicy Thai chili sauce it’s almost exactly the same!
