If you're looking for an alternative to the classic Disney Parks treats, give this homemade marshmallow recipe a try! Nearly everyone loves an ooey, gooey marshmallow. Even if you don't love 'em fresh from the package, we bet you can't resist a s'more! We love how Disney Parks has crafted these Mickey shaped marshmallows to decorate seasonal treats, like marshmallow wands and seasonal milkshakes from Auntie Gravity's.
Homemade Marshmallow Wands!
A mainstay in Disney's parks and resorts treat cases, marshmallow wands are probably a treat you overlooked on your last trip. We certainly did. But these marshmallows dipped in various coatings are not to be missed. There's really a wand for everyone. From the holiday dark chocolate version rolled in candy cane, to the Karamell-Kuche version drizzled with Werther's caramel. In Disneyland Paris, there's even a beautiful, pink, handheld version with chocolate dipped and coconut dusted ears!
Marshmallow Straws!
And then there's our personal favorite marshmallows in Disney: the Mickey shaped marshmallow straw! We first saw these big green marshmallows on Magic Kingdom's Christmas Cookie milkshake (copycat recipe here). Adhered to the straw with edible glue (we used white chocolate), this marshmallow is very much a decoration as it is a treat!
In order to make cutouts, you must first make marshmallow from scratch. Luckily, making homemade marshmallow is easy! The key to cutouts is a good cookie cutter. Luckily, there are lots online, including some nearly identical to what Disney uses (links are in the recipe below!) if you'd like yours Mickey shaped (we think food tastes better when it's Mickey shaped)!
Once you get the hang of making these soft and sugary homemade treats, you can experiment with different colors and shapes! Now, we love adding homemade marshmallows to our hot cocoa (check out our Mickey Shaped Hot Chocolate Bombs here!) and s'mores. Enjoy!
Ingredients
- 2 tablespoons organic powdered sugar
- 1/2 tablespoon cornstarch
- 4 teaspoons powdered gelatin
- 1/4 cup cold water
- 3/4 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/2 teaspoon clear vanilla
- Food coloring (optional)
Supplies Needed
- Candy thermometer
Supplies for Mickey Shaped Marshmallows (Optional)
- Mickey shaped cookie cutter(s).
Instructions
- In a small bowl, whisk together the powdered sugar and cornstarch.
- Line a 8" x 8" pan with parchment paper.
- Using a wire mesh strainer or sifter, dust the parchment paper with 1/2 of the powered sugar/cornstarch mixture.
- In a medium, heat-proof bowl, whisk together the gelatin and 1/4 cup cold water.
- In a small saucepan, add the sugar, corn syrup and 1/4 cup water. Cook the mixture on medium heat, stirring occassionally until the sugar melts, then stop stirring. Let the mixture simmer (bubbling) until the temperature reaches 240 degrees Farenheit. Do NOT stir! If the mixture won't reach 240 degrees after 10 minutes, increase the heat a little bit until it does.
- Add the hot sugar/corn syrup mixture into the bowl of gelatin and blend with an electric mixer for 7 minutes. The mixture should turn white and triple in size.
- Add the vanilla and food coloring, if using, and continue mixing until just combined.
- Immediately pour the marshmallow mixture into the 8" x 8" pan and spread evenly. Using a wire mesh strainer or sifter, dust the marshmallow with the remaining sugar/cornstarch mixture.
- Leave the marshmallow out overnight before moving onto the next step. Do not cover the marshmallow!
- If making shapes, use a cookie cutter to cut out the marshmallows. Enjoy!
