The new Galactic Starcruiser is serving up some pretty outrageous Star Wars blue shrimp! One look at this epic dish, and we felt as though recreating it at home was our destiny (said in a Darth Vader voice).
Disney's spin on a classic shrimp cocktail, this dish is the perfect example of how you can take a familiar food and make it not-of-this-planet by just making one small change: its color. Small changes make seemingly adventurous food much more accessible to those who are hesitant to try new things. We've seen this executed well with many other food offerings on the Galactic Starcruiser, including those resembling grilled cheese and PB&J sandwiches.

Served aboard Disney World's Star Wars Galactic Starcruiser, the Iced Felucian Shrimp Cocktail stuns with its colors and smoke, an effect courtesy of dry ice. At the Crown of Corellia Dining Room, this show-stopper is served during night two of dinner. The shrimp could very well be inspired by the exotic botanicals found on the planet of Felucia. For those unfamiliar with this Star Wars planet, Felucia's flora is very much akin to Avatar's Pandora.
This Magic Ingredient Turns Shrimp Blue
Many are theorizing what makes this shrimp blue. Is it artificial food coloring? Blue spirulina powder (used in Star Wars: Galaxy's Edge's Blue Milk)? The answer is Blue Butterfly Pea Powder, a natural food coloring derived from butterfly pea flower petals.
You don't have to grow a butterfly pea plant to make this! Butterfly pea powder is readily available online. We found our blue butterfly pea powder on Amazon. The powder itself is a light purple color. We doubted the shrimp would turn a vibrant shade of blue, but it did!
Butterfly pea powder on its own has an "earthy" flavor. We find the taste akin to matcha powder, which makes sense considering its used for baked goods and drinks. In our Star Wars inspired blue shrimp, its flavor isn't overpowering (especially when the shrimp are dipped in cocktail sauce). So, you get all that blue color without sacrificing a lot of the classic shrimp cocktail taste. Just beware: This is a natural food coloring, so it will stain your fingers!
It's So Easy to Make Star Wars Style Blue Shrimp!
This dish couldn't be easier to make! It starts with colossal raw shrimp. Add butterfly pea powder to a pot of water, boil the shrimp for approximately 4 minutes, then chill.

Ingredients
- 16 ounces (1 pound) raw, colossal-sized shrimp (13 - 15 shrimp per pound)
- 8 cups water
- 1/2 cup blue butterfly pea powder, packed
For Plating
- Cocktail sauce
- Lettuce for garnishing the plate (e.g. frisée lettuce)
Instructions
- Clean the shrimp. Leaving the tails on, peel and devein the shrimp.
- Add the water to a large pot, whisk in the blue butterfly powder until dissolved, and then heat to boiling.
- Once boiling, add the shrimp. Turn the burner off and let the shrimp sit in the hot blue liquid until fully cooked and curled, approximately 4 minutes.
- Remove the shrimp with a wire mesh strainer or slotted spoon, and place on a paper-towel-lined plate to remove any excess liquid.
- Immediately transfer to a plate or bowl, and refrigerate until the shrimp are chilled.
- To plate, serve with cocktail sauce and garnish with greens (e.g. frisée lettuce). Enjoy!
