It isn't hard to wake up when this tequila sunrise with POG juice recipe is waiting for you! This giant fishbowl cocktail is found at Steakhouse 71 (formerly The Wave) in Disney's Contemporary Resort. Traditionally a morning cocktail, we like that Disney World serves this one all-day and all-night long. So if you hit the parks hard the night before, this beauty will be ready for you, whenever you are.
The "Tequila Sunrise for Two" is a stunning combination of:
Herradura Reposado Tequila, POG Juice, Rosemary Simple Syrup, House-made Grenadine
POG juice is already a giant hit in Disney World thanks to Animal Kingdom Lodge's Jungle Juice. POG juice isn't sold where we live in the Midwest, so we got to make our own. While POG juice is always a mixture of passionfruit, orange, and guava juices, it's up for debate in what ratio. Disney has said equal parts of each, but we feel like this is too orange juice heavy. We want to really taste those tropical juices! We liked our POG juice best 2:2:1 passionfruit:guava:orange.
Make Your Own Grenadine!
For this tequila sunrise with POG juice recipe, you'll want to skip the super bright-red grenadine syrup in your pantry (like Rose's). If you use store-bought grenadine, expect your entire drink to turn pink! For those who don't already know, grenadine syrup is actually pomegranate-flavored, not cherry. To make your own house-made grenadine like Steakhouse 71, all you need to do is gently heat granulated sugar and pomegranate juice. The resulting tasty syrup is magenta colored. When mixed with the tequila, the grenadine layer on the bottom is a brownish-red hue.
Another stand-out in this tequila sunrise for two recipe is the rosemary simple syrup. The addition of this rosemary syrup reminded us a lot of the Dagobah Slug Slunger recipe from Oga's Cantina which can be found in The Star Wars Galaxy's Edge cookbook. For those who love rosemary flavor, this syrup is decadent! It's also extremely easy to make, like the house-made grenadine. You simply heat the sugar and water and then steep fresh rosemary to extract the flavor. YUM!
What makes the tequila sunrise cocktail special is the multi-colored layers. As the grenadine settles to the bottom of the glass, the bottom appears reddish-brown, while the top remains orange...like a beautiful sunrise. Serve this one in a giant fishbowl glass, garnish with tropical fruit, and you've got one stellar cocktail!
If you'd like a sunset drink to pair with the tequila sunrise, we'd recommend the Tatooine Sunset copycat recipe. Very popular in Disneyland's Galaxy's Edge, the Tatooine Sunset is a lovely iced tea flavored with blueberry and melon.
Ingredients
- 16 oz. POG Juice (passionfruit, orange, guava)
- 4 oz. Herradura reposado tequila
- 2 oz. homemade grenadine
- 1 oz. rosemary simple syrup
- Optional, garnish: sliced pineapple, sliced oranges
POG juice recipe:
- 2 parts Welch's passionfruit juice
- 2 parts Ceres guava juice
- 1 part Simply Orange juice
House-made Grenadine Recipe:
- 1/2 cup granulated sugar
- 1/4 cup POM pomegranate juice
- (heat sugar and pomegranate juice over medium heat until sugar has dissolved. Refrigerate.)
Rosemary Simple Syrup Recipe:
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/2 sprig fresh rosemary
- (heat water and sugar over medium heat until sugar has dissolved. Remove from heat and allow rosemary to steep at least 1 hour. Refrigerate.)
Glassware:
- 51 oz. stemmed fishbowl glass We used the Libbey brand glass linked here, but you can use other brands. (If the glass you use is smaller than 51 oz, fill with less ice.)
Instructions
- Fill fishbowl glass with ice and add 2 cups POG juice.
- In separate glass or shaker, combine tequila, house-made grenadine and rosemary simple syrup. Slowly pour tequila mixture down the side of the fishbowl glass filled with POG juice.
- Garnish with tropical fruit, i.e pineapple, oranges, etc.
- Enjoy!
